ABSTRACT
Commercial preparations of multiple emulsions have demonstrated difficulties to achieve satisfactory storage stability. The traditional colloid stability approach becomes too complex when several oils of small mutual solubility are involved. The multiple interfaces each require different surfactants, and when the surfactants inevitably mix, their effect is reduced.
