ABSTRACT

Edible packaging has taken a rebirth in the past 20 years with the use of coatings and films in food applications. In this chapter, the growing interest in this technology is enlightened and aspects such as consumers and environmental needs, commercial interest, and new scientific findings are presented as the promoters of the recent development of edible packaging. In addition, the definition as well as legislation and regulatory aspects of edible packaging is discussed. Future perspectives on using edible packaging are presented, together with the potential use of this technology by academic and industrial players.
