ABSTRACT

Seafood is any form of sea life food product made or harvested by humans and prominently includes fish and shellfish products as well as seaweed. Safety seafood products are nutrient rich food that are good sources of protein, vitamins, minerals, and other valuable bioactive compounds such as canthaxanthin, carotene, and also diet leaf. This chapter shows the acid- and alkali-based process for fish protein isolates and fish oil production. Seafood processing has also been used as a possible waste utilization. The major components of seafood discard products are the tongue, cheeks, stomach, and liver of fish, protein bioactives from residual fish, marine bioactive lipid components, fish skin, carotenoid bioactives and chitinous materials, gut enzymes, flavor products, and antifreeze proteins. By-Products are parts of the fish that are removed before the fish reaches the final consumer for improving their keeping qualities, reducing the shipping weight, or increasing the value of the main fish product.
