ABSTRACT
This chapter introduces the reader to the concept of food security and the frameworks that can be used to evaluate food security. Food is first defined and its major features discussed. The history and evolution of the concept of food security is then elaborated. Finally, four major frameworks for food security analysis and evaluation are explained and their applicability addressed.
