ABSTRACT

The Triple Bottom Line approach argues that companies are responsible for their impact on sustainable development in relation to three aspects: economic, social and environmental. This chapter reviews the main sustainable practices in hospitality and, focusing on the case of hotel chains in two tourist destinations – a consolidated one (Spain) and another rapidly growing destination (Hungary) – the importance of sustainable practices implemented by leading companies in the hotel sector is assessed. Taking as a reference the leading hotel groups with presence in Spain and Hungary with 4 and 5 star hotels, we observe that managers in Spanish hotels pay special attention to the economic and environmental aspects to the detriment of social sustainability related to the local community, while more balanced attention to the three pillars of sustainability is observed for Hungarian hotels. Managerial implications and avenues of further research are suggested to contribute to the knowledge and development of sustainable practices in hotels.
