Transport is not the only component of food emissions, and another environmental impact that is often not considered is the demand for water to produce food. For UK consumers who bought local food, the greatest motivations were to support local producers, or simply because local is tastier. The environmental impact from food is not measured only by the distance that it has covered to reach the plates. People worry much more about food miles by air than they do about food miles by van, although both have similar emissions. Miles matter very little if food travels by ship. The way to relate food and energy is the assessment of productivity to grow food per hectare measured by energy outputs from the food. Milk has a better ratio but is still poor compared with other food items. M. Vourch has indicated that the dairy industry is the greatest water polluter among the food industries.
