ABSTRACT

This chapter outlines the nutritional requirements necessary for healthy dieting, dispels some myths, provides information about foods to avoid, and suggests alternatives. As most Americans, many African Americans have an emotional attachment to food—that is, they eat because of how it makes them feel. A healthy diet is crucial for a healthy relationship, and a healthy relationship is the key to a satisfying life. Protein is absolutely necessary for the body. All cells in the body contain protein, including bones, hair, and nails. Fats are necessary. The various kinds of fat include saturated, unsaturated, monounsaturated, and cholesterol. Carbohydrates include three groups: (1) simple sugars or monosaccharides; (2) disaccharides; and (3) complex carbohydrates. Complex carbohydrates consist mostly of starch and are found in whole grains, potatoes, yams, sweet potatoes, nuts, legumes, and fibers. Food intolerance refers to difficulty digesting food, whereas food allergies trigger an immune response and can be life threatening.
