ABSTRACT

Universities can play a crucial role concerning food waste and sustainability – they provide the appropriate environment to stimulate reflection and action. As in other countries, food waste is a problem in Portugal. There are increasing awareness campaigns to reduce food waste. European Union is also seriously committed to reduce food waste as this will have a great effect on reducing the resources used in food production. The scope of the project also involves the implementation of the Movement in other Higher Education Institutions and the dynamisation of the several practices. The Smaller Eyes than Belly movement guarantee a continuum of actions for an effective behaviour change. Research on food waste is increasing. Concerning consumer-related food waste in food service environments, as reviewed by Aschemann-Witzel et al., it is being argued that nudging strategies can reduce waste.
