ABSTRACT

This chapter discusses the differences between tourist expectations, motivations, and satisfaction as they relate to food tourism. It explains the difference between neophiles and neophobes as it relates to food consumption. The chapter provides descriptive information about foodies and food tourists, such as age and income profiles, food-related experience and activities, and personal values. Tourism provides people something exciting to look forward to and frees them from the routine of everyday life as well as exposure to new activities, environments, and cultures. Expectations are strong beliefs that something will happen. Expectations are derived from the need to fulfill a goal that has some intrinsic value or attractiveness. These expectations lead to motivation, the general desire or willingness to do something or go somewhere. Tourism typologies are classifications of tourists by their behavior. Foodies are individuals with "a long-standing passion for eating and learning about food but who are not food professionals".
