ABSTRACT

Hoppi and Paul Wimbush have a single, beautiful Jersey cow, called Sophie, whom they bought from a large organic farm. At the time of writing she has a four-month-old heifer. Every morning she produces about nine litres (sometimes up to twelve) of milk, and between four and six litres in the evening. Bought for £600 when she was in calf, she was cheaper than the market rate because one udder was not working. She gave birth without the need for veterinary assistance. ‘There was endless milk every morning and every evening!’ Hoppi told me. ‘We had to quickly sell it, make butter and cheese.’
