ABSTRACT
The HSI color model can be described using the terms hue, saturation, and intensity, which represents colors within a double-cone space (Sanchez-Cuevas et al. 2013), as shown in Figure 1. Hue represents various colors in RGB, saturation stands for colorfulness of a stimulus relative to its own brightness, and intensity is the total amount of light passing through a particular area, which makes no contribution to the color. Food safety has recently been focused on widely and is also affecting agricultural products. This trend makes fast, non-invasive, and efficient inspection methods of food safety significant. In particular, the technologies such as near infrared spectrum, sound waves, x-rays, and machine vision are much more popular (Song et al. 2004).
