ABSTRACT

This recipe is designed to challenge novice cooks. It’s still a fairly simple recipe, but requires a little more prep time. The effort and time is definitely worth the wait!

Nonstick cooking spray

1 pound russet potatoes, peeled and sliced into 1/4-inch rounds garlic powder to taste

1 tablespoon olive oil

1 cup chopped onion

1 cup chopped red bell pepper

1/2 teaspoon dried thyme

1 cup Italian sausage, cooked and chopped

8 large eggs

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1 cup shredded smoked cheddar or Gouda cheese
