Mix the soy sauce, sherry, ginger and spring onions. Rub the duck well with the mixture and let it soak for about half an hour.

Heat the fat in a pan and fry the duck until a light brown. Replace it III a heavy pot, pour in the soy mixture and 3 cups of water, then

heat it over a big fire until boiling. Reduce the heat and SImmer for 1 hour. Add the sugar and boil for another % hour. The time required for this recipe depends on the tenderness of the bird. Another Y2 hour may be needed if the bird is tough.
