ABSTRACT

Cereals have always had a central role in human nutrition. Nowadays if scientists remind us the importance of their nutrients and the aid that unrefined cereals give in the prevention of certain diseases to stimulate us in consuming them, the governments remain alert to the food price volatility, as unpredictable climatic conditions have generated an intensification in droughts, floods and hurricanes. Dealing with the current cereals supply situation, the Financial Times has recently reported that “in 2007–08 low stocks ignited furious price rises and food riots in dozens of countries from Haiti to India” (Meyer, 2014).
