ABSTRACT
Barley, according to some authorities, is the most ancient of the cultivated grains and goes back to the very beginnings of agriculture. It was the main brew plant of the Hebrews, Greeks and Romans, and as a beer-making cereal it extends back to Neolithic times. Its use in the production of green malt for whiskey probably dates from the Middle Ages.
