A good venue will not allow any resources or elements in to their venue if there is a risk of compromising health and safety, hygiene or legality. This must extend to service standards, quality, and the risk of not meeting expectations. For business reasons, venues prefer their clients to use in-house catering rather than clients paying an outside caterer to come in and cater the event. This is because in-house catering is an important revenue stream for a venue. A venue makes money from hiring their space to event clients, but generates additional income from food sales, bar sales, and other sales streams such as charging for specialist staff, providing entertainment, and supplying technical equipment. The larger contract catering companies may be contracted to provide food, drinks, hospitality, and events services to venues ranging from conference centres to schools, sports stadia and hospitals.
