Depending on the cultivar, beans show a large variety in the flavonoid content and color of the seed coat. Four colors are most common: black, brown, red, and white. The color of the testa in winged bean varies from white to black by way of green, tan, brown, and purple. Cowpea, Vigna unguiculata (L.) Walp, is cultivated for its pods and seeds in the tropics and subtropics. Mungbean, V. mungo (L.) Hepper, is a tropical plant grown in all the Asiatic countries for food use. H. J. Crofts used anthocyanins as genetic markers for the selection of fababean cultivars free of tannins. The anthocyanins in pea sprouts tend to preferentially form in the basal part of the intemodes in response to genetic and environmental factors. The anthocyanins which form by photoinduction in soybean sprouts are glycosides of malvidin. Lupine, Lupinus spp. Genistae, is a widely distributed legume with a long history of use as a human food.
