ABSTRACT

A critical people issue is the possibility of transmission of disease through the food products. The appropriate controls and education must be undertaken to ensure that good hand wash stations are available and that the employees are utilizing the facilities so that they are not bringing potential hazards into a plant. The system was broken down into its various components and each examined by a mode of failure analysis. It became obvious during this effort that the old procedures of quality control were not sufficient to produce food for the astronauts that could be assured to be safe. The amount of testing required by standard quality control techniques used at that time was so large that meeting the stringent criteria for space use resulted in destructive testing of most of each batch of product. There are many controls that can be established with a little thought and foresight.
