ABSTRACT

Enzymes are catalyst that catalyze various biochemical and chemical reactions. They are universally present in plants and animals. The enzymes are catalysts work at a specific optimum temperature, pressure, pH, and substrate specificity for the production of desired products without any intermediate products as contaminants. Thus, there is an increasing demand for variety of enzymes for use in:

i. Food industries – such as baking, dairy product, starch conversion, and beverage processing (fruit, vegetable juices, beer, and wine), etc.
