ABSTRACT

Outdoor dining should be configured with regard to the orientation of the

sun. East/west-oriented streets have better outdoor dining opportunities on

the north side of the street where diners have the choice of sitting in sun or

shade all day. North/south-oriented streets offer opportunities for outdoor

dining on both sides of the street: in the early part of the day (breakfast and

lunchtime), the west side of the street has sun. In the later afternoon and

evening (cocktail hour and dinnertime), the east side of the street benefits

from sun. Plazas with north/south orientation offer even greater flexibility

for outdoor dining in the early part of the day (east side), midday (north side),

and late afternoon (west side). Other factors such as the ambient temperature,

amount of humidity in the air, and amount of wind also are important to

consider when configuring outdoor dining.
