ABSTRACT

Traditional processing and preservation techniques being practiced in fruits and vegetables, and cereal and dairy sector are not allowing us to compete with the global world. Due to urbanization, availability of agricultural land is decreasing proportionally day by day. Therefore, there is a dire need to increase production of value added products to meet consumer demands. For this purpose, supply chain management, production of innovative nutrient dense foods, improved storage conditions, and appropriate funding at institutional level must be made to boost the postharvest sector. The food processing industry must apply latest preservation techniques to ensure quality value added products in order to increase consumer health. The economy of the country will be strengthened through value addition, quality enhancement, improved production, and greater foreign exchange earnings resulting from increased export of innovative and value added processed food products.
