Vinegar has been consumed for generations by different cultures around the world for its organoleptic properties as well as for its health benefits. Specifically, various bioactivities have been attributed to vinegars, among others, high antioxidant activities, antimicrobial properties, antidiabetic effects, therapeutic properties, anti-visceral obesity properties, and antihypertensive activities. These bioactivities are implicated in the respective health benefits, for example, antioxidant activity is implicated in anti-ageing and general health well-being. Although the main component of vinegars is acetic acid, depending on the substrate source and the production process, vinegars may possess diverse bioactive compounds and thus contribute to various bioactivities, which are related to various health benefits. Therefore, this chapter discusses the various bioactivities and health benefits that vinegars may impart and the corresponding mechanisms.
