ABSTRACT

Food safety and food security are presented as companion challenges to the well-being of global populations. In this chapter safe food and food security are considered as separate issues. Safe food refers to food that when consumed will cause no ill effects to the consumer. And food security refers to the availability of safe food. The effects of unsafe food and insecure food supplies on human and ecological health are presented. Three U.S. federal statutes are discussed: Food, Drug and Cosmetic Act of 1906, Federal Meat Inspection Act of 1906, and the FDA Food Modernization Act of 2011. Global food safety and security policies are described for the EU, China, and India. Threats to food security are described, including climate change, food wastage, and loss of pollinators. The global state of food insecurity is discussed, as noted by the UN’s Food and Agriculture Organization.
