ABSTRACT
Microorganisms are valuable tools for biotechnology applications. Yeast, a eukaryotic microbe is an immensely attractive and versatile tool for such applications. The unique physiological and biological properties of various yeast model systems are tapped for several biotechnological applications. In this chapter, we aim to provide an overview of our current knowledge on such diverse applications of various 176yeast models in avenues such as fundamental research, agriculture, environment and industry.
