ABSTRACT

This chapter provides the relevant details related to levan's manufacture and structure, production, functionality, and food applications. Levan is composed of repeating 5-member fructofuranosyl rings connected by β-2,6 linkages. In the food industry, levan is used as a stabilizer, emulsifier, formulation aid, surface-finishing agent, encapsulating agent, and a carrier of flavors and fragrances. Levan is naturally present in several food products, and consequently, it is consumed in minute quantities by humans. Prebiotic substances stimulate the proliferation of useful bacteria in the colon while inhibiting harmful microorganisms. Levan can stabilize a colloid system by the formation of an emulsion, aerosol, or foam, which can be used in food and beverages. The edible films are too brittle when levan is used as the only ingredient, but when levan is mixed with other ingredients, such as glycerol, elastic and extrudable films can be produced.
