ABSTRACT
The European food laws introduced a new concept in the food market, “from farm to fork”, by designing a cross accountability to all stakeholders in the food chain (Veiros et al., 2009). The catering sector assigns a very important role to entrepreneurs, considering them primarily responsible for food safety (APHORT, 2008).
