T he role of nutrition in health and sports performance has gained importance primarily through increased knowledge of exercise physiology. Nutrition is the science of food and is generally described as the sum

total of the processes involved in the intake and utilization of food, including the ingestion, digestion, absorption, and metabolism of food. Dietetics is the science of applying food and nutrition to health and disease; therefore, individuals who receive training to become experts in food and nutrition are commonly referred to as dietitians.
