On the other hand I was confronted with the fact that research concerning the alimentation of Constantinople in the last years (and decades) focused mainly on grain and bread supply. Of course I would not deny that these (together with different gruels or pap-dishes2) have been the most important factors for mass supply before modern times. But if we take into consideration that meat and eggs, and also milk products — with the exception perhaps of cheese of lower quality — were rather expensive in Byzantium, it follows, that vegetables — as well as olives and fruits — played an important role in everyday life.
