ABSTRACT
To sustain a highly inelastic per capita demand for wheat bread, supply had to be determined by the market, rather than by the shortfalls and surpluses of local production. And, needless to say, to meet a huge increase in the aggregate demand for wheat bread, over the century in review, a matching expansion of supply was essential.
