The nature of bread supply and the character of the baking trade in Britain were shaped by the assize of bread, wherever it operated up to its abolition in 1836.1 And even where an assize was not set, the system influenced the trade, either because its principle and methods were approximated by voluntary agreement or because they were consciously refuted; that broader influence, pro or contra, was felt long after abolition.
