ABSTRACT

Clostridium perfringens is a gram-positive, spore-forming, nonmotile, obligately anaerobic, encapsulated rod. Notable differences among strains of C. perfringens include the extent of β-hemolysis and the heat resistance of spores. “Heat-sensitive” food poisoning strains are less common than “heat-resistant” strains, the heat sensitivity of C. perfringens spores being dened as not surviving 100°C for 60 min.
