ABSTRACT

Oils and fats are produced commercially in large quantities. They are also processed andmodiŒedforusesolelyorasingredientsinvariousfoods.Althoughalarge proportionofoilsarecomposedoftriacylglycerols,theyaremulticomponentand complexmixturesofvariousconstituents,someofthemharmful.Inthischapter, possiblecontaminationsourcesofoilsandfatsarediscussed.Studiesonanalysisfor their detection are also summarized.
