ABSTRACT

Freezing is a technique in which food can be stored for long periods of time without being spoiled by microorganisms. Frozen foods are consumed in large numbers and quantities across the world; the numbers become even larger in North American countries. For example, in a study conducted few years back, it was seen that a single member from an average family in the United States eats frozen food about 70 times in a single year (Harris and Shiptsova, 2007). This number was predicted to grow steadily and we can see every day the expansion of frozen food sections in grocery stores. Frozen foods are perceived to be fresher, and they are high in quality, both of which are factors that drive their market, which is continuously increasing.
