ABSTRACT

When approaching the subject of interactions of components for a speciœc functional food, it is imperative that the overall objective for looking at interactions is clearly understood. For this chapter, it is assumed that the overall objective of all functional food innovation is to successfully commercialize a functional food product. In the product development process, there will be many hurdles and decision points and it will not be possible to maximize all options. When faced with such decisions, the developer will need to know which targets are “must haves” and which are “nice to have.” To this end, the chapter is structured around the interactions that are key to successfully commercializing functional food innovation.
