There are many evidences suggesting that dietary phenolic compounds lead to bene˜cial effects for health. In particular, resveratrol (E-3,5,4′-trihydroxystilbene = RSV) (1), a well-known wine grape component (Langcake and Pryce 1976), is one of the most promising natural polyphenols with anticancer properties (Aggarwal and Shishoida 2006; Delmas et al. 2006). Among such positive effects, resveratrol has been considered as an antioxidant with a direct impact on oxidative stress-related diseases (i.e., atherosclerotic cardiovascular diseases, cancer, neurodegenerative processes), as summarized in Figure 10.1.
