ABSTRACT

Despite a wealth of knowledge and advice about the causative role of inadequate diet in chronic diseases, the incidence of diet-related chronic disease continues to rise in the Western world [1]. This has led to the concept of functional foods, dened as those which actively promote health and well-being and hence to the growth of a functional foods industry whose rationale is to identify the key components and increase accordingly the nutritional quality of individual foods.
