ABSTRACT

The rapid development of biotechnology has made a tremendous impact on various sectors of the economy over the last several years. Industries such as agriculture, food, chemicals, and pharmaceuticals are major players that are showing a rapid economic growth. Advances in fermentation techniques have made the scale-up of products easier and cheaper. Breakthroughs in the eld of microbiology have also contributed a great deal to the development of the fermentation industry. Even though fermentation is an old process, it still attracts lots of industries for its ability to develop newer products in economical ways. The art of trial and error was the best technique to be handed on to the next generation so as to achieve the best end result. Even today, some producers of fermented products, such as beer brewers, rely very much on art and received wisdom.
