ABSTRACT
The rst applications of enzymes were in the production of cheese, sourdough, beer, wine, and vinegar, and in the manufacture of commodities such as leather, indigo, and linen (Olempska-Beer et al. 2006). In those times, all the enzymes were applied as a part of natural extracts obtained from plants, animals, or microorganisms.
