Food safety on ships and aircraft

The general considerations and actions required for achieving food safety on ships and aircraft are the same as for almost all the other settings described elsewhere in this book. However, ships and aircraft have some unique features and constraints imposed by their physical structure, security considerations and more limited opportunity for sourcing of food and water.
