ABSTRACT
Environmental pollutants include toxic metals, radionuclides, PCBs, dioxins, and other compounds that can be found in the nature usually in trace amounts as a result of unconcerned human industrial, military, and other activities. e results of carelessness and inconsideration are now continuously returning to us like a boomerang in the form of anthropogenic pollutants. is chapter will consider mainly such toxic eects of these substances that manifest themselves in the case of humans via food or beverages.
