ABSTRACT

Bread is one of the main foods around the world due to its superior nutritional, sensorial, and textural characteristics. The first bread was made around 10,000 years BC, or over 12,000 years in the past, which may have been developed by deliberate experimentation with water and grain flour. Egyptians are the pioneers who made the art of bread making popular throughout the world. The control of the production and distribution of bread has been used as a means of exercising political influence over the populace for at least the last 2000 years. Even today, a shortage of bread is synonymous with hard times, while the promise of its service is used as a rallying call for better life (Scanlon and Zghal 2001).
