ABSTRACT

Many elds of application could be fullled by biosurfactants (BSs) properties, such as agriculture, construction, bioremediation processes, lubricants, leather treatment, paper and metal industries, as well as textile, cosmetics, pharmaceutical, petrochemicals, industrial cleansing, and above all, within the scope of this chapter, the food industry. The properties demonstrated by microbial BSs such as high biodegradability, low toxicity, low critical micelle concentration (CMC), high surface activity, stability to extreme pH, temperature, salt concentrations, and biological activity are very useful for food industry. Thus, BSs can replace conventional synthetic surfactants with great advantages and additionally, their bio-based origin confers to these molecules the status of natural additives satisfying the actual market needs.
