9.1 INTRODUCTION

Caffeine (3,7-dihydro-1,3,7-trimethyl-1H-purine-2,6-dione) is naturally occurring in some beverages and is also used as a pharmacological agent being a central nervous system stimulant [1-3]. The interactions of metal ions with caffeine are of major biological interest, due to the fact that these complexes play a dominant role in many biochemical interactions [1-3]. Among them, we are interested in systems containing calcium ions and caffeine due to their influence in health sciences.
