ABSTRACT

Antioxidants are substances that protect living tissues from the damage induced by free radicals, which arise from aerobic breathing as a consequence of incomplete reduction of molecular oxygen and are directly related to several diseases, such as cancer, sclerosis, and aging skin (Krishnaiah et al., 2011). The human organism has the potential to inhibit the action of free radicals by enzyme complexes, but a daily ingestion of nonenzymatic antioxidant compounds that contribute to free radical scavenging is also necessary (Yilmaz and Toledo, 2004).
