ABSTRACT

One of the risks involved in the use of food contact materials is the contamination of food from the compounds transferred from the packaging materials or articles to the food in contact with them. This transference of matter is called “migration.” Migration process is governed by two main phenomena: (a) the partition coefcient of the migrant between the packaging material and the food and (b) the diffusion of migrants in the packaging material and in the food. There are a series of parameters that affect the migration process: temperature that inuences the diffusion and also the partition coefcients; characteristics of the packaging material or article, such as composition, polarity, and crystallinity; and characteristics of the food in contact with them, such as polarity, fat matter, alcohol content, and composition.
