ABSTRACT

Proteins are essential constituents of all protoplasm and are essential food constituents. They are characterized by the fact that on hydrolysis they yield several dozen types of amino acids. Difference between proteins are largely a matter of number, and the kind of arrangement of such amino acids within the protein molecule. Proteins may be classified as

1. Simple, which includes albumins, globulins, glutelins, albuminoids, prolamines, histones, and protamines.
