ABSTRACT

A brief overview of the major food ingredients typically used to fabricate foodgrade colloidal delivery systems is given in Table 3.2. A summary of potential release mechanisms for active ingredients encapsulated within carrier particles with different compositions is given in Table 3.3. A more detailed description of specific delivery systems is provided in the later chapters on surfactant-based, emulsionbased, and biopolymer-based delivery systems (Chapters 5 through 7).
