ABSTRACT

Lipids are a heterogeneous group of substances including fats, mono/di/tri-glycerides, phospholipids, waxes, fat-soluble vitamins and sterols which are soluble in organic solvents, but, insoluble in water. There are various functions of lipids, for instance, they serve as structural components of membranes and provide protection as an outer coating of the organism. They are storage and transport forms of metabolic fuel. The lipoprotein has hydrophobic structures inside, such as cholesterol esters and triacylglycerol (TAG), which has a surface coat of polar lipids including unesterifi ed cholesterol and phospholipids as well as apolipoproteins (Trinick and Duly 2005).
