ABSTRACT

Supercritical carbon dioxide (SCCO2) is considered to be a valuable technology for processing and preservation of horticultural products. A growing trend is a demand by consumers for high-quality, minimally processed, and health-promoting food products. Additionally, due to environmental and economic concerns, it is necessary for the food processing industry to develop and adopt energy-efcient, cost-saving, and safer processes. As such, SCCO2 has been investigated for use as an effective and green technology for the extraction of bioactive compounds with health-promoting compounds from horticultural products due to the use of a benign extraction solvent (CO2) and relatively low temperatures.
