ABSTRACT
Water is the most ubiquitous substance on earth. The chemical structure of water, made up of hydrogen and oxygen atoms is intrinsically simple, well studied and universally accepted. Water is subtle in its many manifestations, occurs in three phases, liquid, ice and gas (Fig. 1) and fulfils an enormous array of functions in our world.
